Super healthy cocoa mousse

This is one of the most amazing desserts I've ever made! It's light but satisfying, sweet but not cloying, and very easy to make. It's so delicious it's hard to believe it's absolutely rich in fiber, protein and healthy fats! Everything you need to start the day, or to give an "up" in the middle of the afternoon when hunger and the craving for sweets comes to the fore. This is also an error-free recipe to make for guests. You can even play a joke and ask them if they find out what the ingredients are – people are surprised to learn that sugar isn't one of them, and that it's totally free of animal products.

So, talking about the ingredients, there is a combination of 6 all-natural and healthy foods. Cocoa is a superfood, rich in antioxidants, magnesium, iron and phosphorus, and therefore a great source of energy! Dates give sweetness and a perfect texture and are rich in potassium, calcium, copper and magnesium, and contain high levels of complex sugars, which are slowly broken down by our body which is interesting when we need a long physical or mental effort duration, such as in sports practices or in an event.

Dates are also rich in pantothenic acid or vitamin B5, known for its tranquilizing effects. Thus, some call the dates “natural anti-stress doses” for their ability to relax and provide a feeling of well-being. It may also be interesting to eat some dates before bed because they contain tryptophan, which stimulates the formation of melatonin, an important hormone in sleep regulation and essential to prevent insomnia.

As the preparation is super easy, all you need to do is add the ingredients to the food processor and then put it to freeze – here at home I have this mousse in the fridge almost every week. However, it is possible that you need to do it in two steps, which consists of first making the nut butter, which does not make the recipe difficult at all!

Super healthy cocoa mousse

 Serves 2

– 2 very ripe bananas

– 1 ripe avocado

– 6 dates (preferably type Medjool – are sweeter)

– 2 tablespoons of water

– 2 tablespoons full of chestnut butter*

– 2 heaped tablespoons of cocoa powder 100 pure %

Optional

– a handful of toasted hazelnuts

– a spoon of natural strawberry and chia jam

Instructions:

1- Put all the ingredients in a food processor – first, remove the seeds from the dates – and then beat until you get a smooth and creamy mixture. A blender can also work for this, but a food processor is much easier and faster.

2- Reserve in the fridge for 1 or 2 hours before enjoying, or if you're in a hurry, put it in the freezer for about 30 minutes. Add the toppings to taste or enjoy it straight!

* Chestnut butter:

1 cup of cashew nuts

Let the chestnuts soak for 3 to 4 hours, then discard the water and place them in the food processor at full speed. How long it will take to get ready depends on your processor, so you may need to turn it off if the device is getting too hot and wait for it to cool down before continuing. On my processor, a simple Walita model, this lasts about 15 minutes, so I take a break after 10 minutes on. Once it has a pasty consistency it will be ready.
